Cool As a Cucumber
Cool down with this quick cucumber kichadi recipe!
Ingredients
- 1cup cucumberpeeled, seeded and chopped into cubes
- cup ¾yogurt
- Salt + as needed
To grind
- 1/3cup Grated coconut
- 2 Green chilies
- tsp ¼mustard seed
- 2 pearl onionschopped
For seasoning
- 2tsp coconut oil
- 1/3tsp Mustard seeds
- 2 Red chilies
- 4-5 Curry Leaves
Instructions
- Grind the ‘to grind’ ingredients into a smooth paste.
- In a pot, cook the cucumber in a little salt seasoned water until soft.
- Then, stir in the paste, and cook on a low flame for three minutes.
- Remove the cucumber from the flame and allow it to cool.
- Once cooled, stir in the curd.
- Then, heat the coconut oil and fry the mustard seeds red chilies and curry leaves.
- Saute for a minute.
- Remove from pan and pour over the cucumber.
- Serve!
